Easy Old-Time Flapjacks Recipe

Easy Old-Time Flapjacks Recipe - (Breads, Rolls)

Ingredients:

1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon shortening
1/2 cup milk or water
Lard or shortening for frying

Directions:

Combine all the ingredients into a large mixing bowl and mix well. Pour the dough on a well-floured surface. Roll or pat into 3/8 to 1/2-inch thickness. Cut the dough into irregular-shaped squares, 2-3 inches long, and make slits in the middle of the squares. Heat some lard in the frying pan to fry your flapjacks. Fry 2 or 3 flapjacks at a time. Cook the flapjacks for 2-3 minutes or until golden brown. Place the flapjacks on a paper towel briefly to drain.

Serve your flapjacks with butter, syrup, jelly, or honey. This was an old-time, or "pioneer" recipe. Flapjacks were usually made when there was little food in the home. The slits in the flapjacks help them to fry evenly. When I was a child I always enjoyed breakfast time with my mother when she made flapjacks. She never called them flapjacks. They were always called pancakes and most of the time they came from a box mix. This recipe is very authentic and what "old-timers" would mix as a recipe. My favorite topping was syrup.

My second daughter was dating a nice young man in the past and we decided to eat at Denny's Restaurant with my daughter and her boyfriend. We ordered "pancakes" to eat on that occasion. I watched my daughter's boyfriend prepare his food before eating. He took his spoon and began to cut a hole in the middle of the pancakes. I asked him what he was doing. He said, "Just watch." After he cut the hole in the middle of the pancakes he filled the hole with syrup until it ran over top and onto the plate. He said he was making a crater for the syrup like you do when for mashed potatoes and gravy. It's like a gravy crater in mashed potatoes but it's a syrup crater. It made sense to me and I have been doing that since.

My grandfather is famous in our family for making banana bread. He likes to let his bananas turn black so his bananas are sweet for his bread. If you visit his house and open his refrigerator freezer, you will likely find frozen black bananas. He is 94 years old and still loves making banana bread. I've heard my grandfather remark on other people's banana bread and insist that his bread is better and sweeter. My grandfather is a funny person.
