My Thoughts On Peanut Butter Cookies:

You will enjoy these peanut butter cookies. Here is my opportunity to brag on my youngest daughter again and her baking skills. She makes the best peanut butter cookies. The recipe I am sharing with you here is not her recipe. I am sure she will let me share her recipe here in the future but until then I think this recipe will be great.

I love the simplicity of peanut butter cookies and the peanut butter taste. I think the best peanut butter cookie should not be too sweet and not too salty. There should be a perfect balance between sugar and salt. I want those who eat my cookies to want to keep eating more.

More Information For You:

A Brief History of Peanut Butter Cookies

Peanut butter cookies are a relatively recent addition to the cookie world. While peanuts have been enjoyed for centuries, their transformation into a creamy spread and then a cookie ingredient is a more modern development.

The rise of peanut butter in the early 20th century paved the way for peanut butter cookies. The iconic crisscross pattern on top, often associated with the cookies, is credited to Mary Ellis Ames of Pillsbury in the 1930s. Her recipe, published in "Pillsbury's Balanced Recipes," popularized this distinctive mark.

Peanut butter cookies became a staple in American households during the mid-20th century, offering a delicious and affordable treat. Their simplicity and versatility contributed to their enduring popularity.

National Peanut Butter Cookie Day is June 12th!

Chicken Enchiladas Recipe

This recipe is INCREDIBLE!

Chicken Enchiladas Recipe

Quote For The Day:

"Let’s get one thing straight: Mexican food takes a certain amount of time to cook. If you don’t have the time, don’t cook it. You can rush a Mexican meal, but you will pay in some way. You can buy so-called Mexican food at too many restaurants that say they cook Mexican food. But the real food, the most savory food, is prepared with time and love and at home. So, give up the illusion that you can throw Mexican food together. Just understand that you are going to have to make and take the time." - Denise Chavez

Kielbasa and potatoes with cheese

A friend at work shared a dish she put together. She always shares her food with us. She doesn't share every day but she does often. We are very grateful to eat the food she brings. The Kielbasa and potatoes is not a written recipe. She said it was something that she put together because she had the ingredients and needed to make something for the week.

There is not a good segue into what I want to share with you. I received news from one of my daughters. She is a deli-manager at a local restaurant. She told me they are closing the doors. I am sad to hear this. I hate it that she will be losing her job. She enjoyed her deli tasks and made good work friends.

The local restaurant has been open for many years. The restaurant was shut down last year for over 6 months for remodeling. I heard the cost of remodeling caused a great amount of debt and that is the reason for closing the business now.

My daughter will have to look for a different job. I know that feeling well. I lost a job many years ago at a company I was planning to stay with until retirement. They moved the company to Mexico. I was very disappointed too. I was left to looking for a different job that I could work at.

One things that never changes about life is that there is always change. We must learn to pivot and adjust our sales. We do the best we can do.

My Thoughts On Chicken Enchiladas:

When I go to a Mexican restaurant, if I do not order beef enchiladas, I order chicken enchiladas. I also love the steak burritos if they are available. What I love most about chicken enchiladas is the seasoning flavor that is put into the chicken when it is cooked. The chopped chilies and creamy sauce added with melted cheese tops it off. I must have corn chips and cheese with my chicken enchiladas. Are you craving this food yet? This is a great recipe if you are in the mood for a Mexican dish. Give it a try and share your experience with me. I would love to see your pictures.

Chicken Enchiladas Recipe - (Mexican Food)

  • 1 whole chicken (2 1/2-3 pounds, skinned, boneed and cooked, you can use a pre-made rotisserie chicken for this)

  • 1 can RO-TEL (diced tomatoes and green chilies)
  • 8 flour tortillas (8-inch)
  • 1 sour cream (8 ounces)
  • 1 cup Cheddar cheese (grated)
  • Chopped scallions
  • Sliced ripe olives

Instructions:

Mocha Cheesecake Delight Recipe

Food For Thought:

Pulled-pork barbecue sandwich!

Yesterday I stopped by one of my favorite barbecue food trucks. They are located in Marshfield, Missouri. If you are a local, you probably know about this food truck. If you are traveling through and they happen to be open, you will love their food. They have great sauce but you will not need it. The smoked meat is so delicious and tasty you will want to savor every bite.

I had onion and pickles on my sandwich. The onion breath is worth it! They are such good hardworking people and I love to support them. It is so inspiring to see people start a business that serves the community. The entrepreneurial spirit is alive in people. I believe it is good to support local small businesses. They are so important to our community and give people more choices.

The big-box store was hosting a local car show and made the barbecue truck set up on the side of the parking lot instead of in front of the entrance. This made the food truck traffic slower than normal. Shame on you big-box store! Maybe I shouldn't be so negative about it but these are great people with a great food product. Why place them aside where traffic is slower? I don't get it.

You can visit the Facebook page KETTLE & QUE and give them a like. Check out their hours so you won't miss their great barbecue! If you have tried their food, please leave a review of your experience. It will help them.

A Few Questions For You:

  • Are you a coffee lover?
  • Do you like Mocha coffee?
  • Have you tried a Mocha cheesecake before?
  • Have you made a Mocha cheesecake in the past? If you have, I would love to read your experience.
  • Did you read my recipe from yesterday? It is called Cashew Chicken Perfection Recipe and it is a classic recipe that will make you think it was cooked in an authentic Chinese restaurant.
  • How would you garnish this Mocha cheesecake?

Extra Information For You:

Did you know the cashew tree originates in Brazil? Americans consume over 90% of the world's harvested cashews. The average cashew tree is 30-50 feet tall. Cashews are green before they are roasted. You would be surprised at how many products the cashew shell is made from. Learn more interesting facts and history about cashews by visiting L'ORENTA.

My Thoughts On Mocha Cheesecake Delight:

Many cheesecakes are baked but this cheesecake is placed in the freezer for 6 hours to set. It's cold, full of chocolate, and coffee. It will give you a great sugar kick you'll want more of. Chocolate cookie crumbs, raspberries, and mint are used for this recipe but you can use chocolate shavings and cherries if you like that better. You can also use chocolate syrup to drizzle on top. Have a cup of hot Mocha coffee with this cheesecake to really kick it up a notch.

Here's a great Cheesecake Recipe Cookbook with 50 delicious recipes!

Mocha Cheesecake Delight Recipe - (Desserts) 6-10 servings

  • 1 can sweetened condensed milk (14 ounces)
  • 2/3 cup chocolate syrup
  • 2 tablespoons instant coffee
  • 1 teaspoon hot water
  • 1 cup heavy whipping cream (whipped)
  • Additional cookie crumbs for garnish

Instructions:

In a large bowl, beat the softened cream cheese until it is fluffy. Add the condensed milk and chocolate syrup to the cream cheese. Dissolve the instant coffee in the hot water and stir it into the cream cheese mixture. Fold in the whipped cream.
