Orange Chicken Recipe

Orange Chicken Recipe - (Main Dishes, Chicken)

Ingredients:

2 whole chicken breasts (boneless & skinless)
2 tablespoons butter (or margarine, melted, butter is better)
1/2 teaspoon paprika
1/4 cup onion (finely chopped)
1 teaspoon salt (optional)
1/4 teaspoon rosemary (dried & crushed)
Pinch of black pepper
1 cup orange juice
1 orange rind (finely grated)
1 tablespoon cornstarch
2 tablespoons Worcestershire sauce

*If you like a sweeter recipe add 2 teaspoons of sugar to the process, but the sugar in the orange juice will provide a hint of sweetness that works well.

Directions:

Arrange the chicken breasts in a shallow 13x9 baking dish. Drizzle melted butter over the chicken breasts, and sprinkle with the paprika. Combine the onion, salt, rosemary, pepper, orange juice, orange rind, cornstarch, and Worcestershire sauce. Pour it over the chicken. Bake at 325 degrees for 40 minutes or until tender. Baste the chicken occasionally with the pan juice.

Fake mouse prank!

My manager is terrified of mice, especially dead mice. We all have fears but this particular fear is crippling for my boss. My co-workers created this fake mouse and decided to present it to her. I was not involved in this but didn't want to miss the expression on my boss's face when she saw it.

One co-worker carefully held the fake mouse and began walking towards my boss in the breakroom. My boss raised an eyebrow and asked "What do you have in your hands?" in a suspecting tone. She got a tiny peek at the fake mouse and sprang from her chair in a panic kicking and screaming.

Even after she found out it was fake she still wanted nothing to do with it. I admit this is not a nice thing to do to a person who is afraid of mice. In our daily work, and during break time, we try to make the work environment fun. It gives us entertaining memories to recall.

For any of my employers who may read this, the mouse was made from trash material and not on company time. Also, no mice were harmed in the making of this joke.

East Indian Chicken Recipe

East Indian Chicken Recipe - (Indian Food)

Ingredients:

2 cans condensed cream of chicken soup, undiluted (10 3/4 ounces each)
1 1/2 cans of frozen orange juice concentrate, undiluted (6 ounces each)
2 teaspoons curry powder
1/4 cup butter or margarine
8 whole chicken breasts (boneless & skinless)
1/2 cup sliced almonds
1/2 cup currants
Salt and pepper to your taste

Directions:

Preheat the oven to 350 degrees. Combine the soup, orange juice concentrate, and curry powder. Melt butter in a large shallow baking dish in the oven. Remove from oven, and coat chicken with melted butter. Arrange chicken in a baking dish. Sprinkle with salt and pepper. Cover with soup mixture. Bake for 30 minutes. Remove from the oven. Baste with the sauce, and sprinkle with almonds. Return to the oven, and bake for an additional 30 minutes. Sprinkle with currants, and continue baking for 15-20 minutes. This dish can be assembled early and baked just before serving. It is nice with wild rice and crisply cooked green vegetables.

Thoughts On East Indian Chicken:

If you've never had Indian food let this recipe be your introduction. Indian Chicken is delicious. I remember first tasting Indian food at a local Indian restaurant. It blew my mind! I had never tasted anything like it before. Maybe it was the curry. The curry spice in food was new to me. This was about 7 years ago. I actually asked myself why I had not tasted Indian food before. I was missing out. There is spicy Indian and non-spicy food with a creamy taste.

I recommend adding Basmati rice to this dish. Basmati is long and slender rice with a specific aroma you will love.

More Information For You:

East Indian Chicken originates from India. I want to share some information on curry. Curry is what gives East Indian Chicken its specific flavor and no other can compare. Curry reflects the Indian culture. It is a spice that is also very popular in American cooking culture. Curry has a very interesting history. My Thoughts For Today:

Marshmallows for the grand peeps!

Since I became a grandfather, known as "Papaw" to these sweet little ones, I have made it a ritual to bring marshmallows to my little grandchildren. I know sugar is not good for children. They do not get sugar all the time but I want them to always remember me bringing them marshmallows as a core memory. I try to find different flavors of marshmallows so they can try something new. Regular vanilla marshmallows are the best in my opinion.

I found these YUMMALLO Sour marshmallows and thought it would be fun for them to try. The flavors in this bag are strawberry, blue raspberry, and cherry. They are sugar-coated. There ya go again, Grandpa! Giving the grandbabies sugar. 

Have you seen or tried these marshmallows? I found them on the baking aisle alongside the regular marshmallows. Little children and grandchildren grow so fast. I think it's good to create as many good memories as possible for them. Food is a great way to create memories. Maybe I should try bringing them bags of carrots. That may be more healthy but I guess it is the mid-western upbringing in me.

Fast Texas Pete Chicken Wings Easy Recipe

Fast Texas Pete Chicken Wings Easy Recipe - (Main Dishes, Chicken)

Ingredients:

1/2 cup margarine
1 cup Texas Pete sauce (you can use your favorite sauce but give this one a try)
2 Tablespoons brown sugar
2 Tablespoons Worcestershire sauce
1 24-count package chicken wings
Oil for deep frying

Directions:

Melt margarine in a small saucepan. Stir in Texas Pete sauce, brown sugar, and Worcestershire sauce. Deep-fry chicken wings in hot oil in deep-fryer until wings float to the top and are golden brown. Place the wings in a casserole dish. Add sauce. Cover the casserole dish. Shake until chicken wings are covered with sauce.

Yield: 8 servings

My Thoughts On Super Fast Chicken Wings:

I must say that Texas Pete Hot Sauce is one of my favorite hot sauces I have tried. I have only recently tried Texas Pete and I am a huge fan, to say the least. It has moved to my top three all-time favorites. Tabasco has always been my number one. My wife brought home Texas Pete Hot Sauce and after trying it, I decided to move it to the top of the list. I just love the burn Tabasco gives on my tongue but Texas Pete has a more vinegar taste to it. I think that is why I love it. A little less burn and a lot more vinegar.

This recipe post is supposed to be about chicken wings but what makes this recipe so special is the flavor Texas Pete provides. As mentioned in the recipe, you can use your favorite hot sauce but I beg you to give this recipe a try.

Did you know there is a National Chicken Wing Day? Well, there is, and according to National Day Archives, it is on July 29th. I know that is some time away but I thought you would like that fact if you did not know it. Funny Food Meme!

When I was a kid I had one of those windup jack-in-the-box toys that played music when I cranked it. It would always give me a jump when the lid would pop open. When I got older and opened my first can of biquits I had a similar experience. I'm not a big sissy man now and I actually enjoy the pop the can will make while pulling the paper. You might admit that pop of the can is surprising even if it doesn't scare you.

Beef Parmigiana Easy Recipe

Beef Parmigiana Easy Recipe - (Main Dishes, Beef)

Ingredients:

1 1/2 to 2 pounds beef round steak
3 tablespoons flour
1/2 teaspoons salt
1/8 teaspoon pepper
1 egg (slightly beaten)
1 tablespoon water
1/2 cup fine dry bread crumbs
1/4 cup Parmesan cheese (grated)
1/2 teaspoon basil leaves
3 tablespoons cooking oil
1 can (15 ounce) tomato sauce
1 clove garlic (crushed) or 1 tablespoon minced garlic
1 tablespoon sugar
1/2 teaspoon oregano leaf
4 slices (approximately 1 ounce each) Mozzarella cheese

Directions:

Use round steak cut about 1/2 to 3/4 inches in thickness. Cut into 6 serving-size pieces.  Mix flour, salt and pepper. Dredge meat in seasoned flour and pound. Combine bread crumbs, Parmesan cheese, and basil leaves. Dip meat pieces in egg and water mixture, then dredge in crumb mixture, coating evenly. Brown in cooking oil. Place in a roasting pan or baking dish, 13 1/2 x 9 x 2 inches. Combine tomato sauce, garlic, sugar, and oregano; pour over meat. With a tight foil cover, cook in a moderate oven, 350 degrees, for 1 hour 10 minutes or until tender. Place a Mozzarella slice on each piece of meat. Sprinkle added oregano, if desired. Bake an additional 3 to 5 minutes until cheese melts. Serve sauce with meat. 

Serves: 6

My Thoughts About Beef Parmigiana:

Beef! You gotta love it! There are so many ways to cook beef. Beef Parmigiana is one of the tastiest ways to cook beef. I have always considered beef parmigiana an Italian recipe but no matter what type it is, I have always loved it. If you enjoy wine with your dinner, enjoy your favorite glass of red wine with this dish.

Growing up my mother mostly cooked chicken parmigiana but there is nothing like the beef taste with parmigian cheese. I do like a little extra cheese on my beef parmigiana, and sauce too. This recipe calls for a whole tablespoon of sugar and 1/2 teaspoon of salt. The sweet and salty combination makes you want to take one bite after another. To me, that is the secret of cooking great recipes.

Extra Information For You:

Okay, you know where beef comes from just like everyone else around the globe, but I wanted to share some information I found about specifically, parmigiana. This is another one of my Italian dishes and the word parmigiana strikes up a feeling of Italy for me. Well, it makes me think of Olive Garden mostly. I just love going to Olive Garden. When the server comes with that little cheese grater and asks if I want cheese, I feel bad to say yes but I just can't help myself sometimes. I am almost tempted to ask the server to just leave the grater at the table and I can do it myself because I am afraid they will judge me for how long I make theme crank on the dang thing.

There are several different locations in Italy that claim they originated parmigiana but there is really no way to tell exactly where this wonderful cheese came from. One thing is for sure, each location in Italy has its own version of Parmigiana. A Few Questions For You:

First of all, I just have to ask you, because I always do in all my posts, what is your favorite parmigiana dish? I know that eggplant parmigiana is very common, and even chicken, but there are other parmigiana dishes you might like. I'm gonna have to step out here and answer my own question. My favorite is beef parmigiana. Now, being from Missouri, and growing up eating deer meat, I will also add that deer parmigiana is very good. Especially because I love the taste of deer. I hope I didn't lose you on that comment. Some people are very touchy when it comes to deer meat. I really don't understand it other than they possibly did not grow up eating deer. 

Next question. Did you happen to see my last recipe? It is a dessert recipe and if you decide to cook beef parmigiana my last recipe will go well with this one. Trust me when I tell you, it is so delicious. It is called Blueberry Crisp Easy Recipe and I would love to know what you think of it. 

Personal Thoughts I'd Like To Share:

Over the past weekend, I decided to make chili. I used the recipe I shared in previous a previous post. As I mentioned I worked on it for a few years to get it just the way I like it. Do you like chili? God knows I could eat it just about every day. Maybe it's a "guy" thing. I have heard that stereotype in movies. I heard that about spaghetti too. "Men can live on chili and spaghetti." I've heard them say. I think there might be some truth to that. You can make a bunch of it and it lasts a long time. What are your thoughts?

Anyway, a friend of mine mentioned White Chicken Chili and that got my attention because I have never cooked it before. I did use chicken in my chili recipe instead of beef. It turned out pretty good and I think I will have some for lunch today. The White Chicken Chili has my attention because first of all, it's chili, and second of all there are different spices. I love spices and cooking with them.

The chicken chili I made this weekend.


You may notice I have corn in my chili in the picture I shared above. I love how the chicken looks in the chili and it tastes pretty good. I will have to admit I like beef just a little better in my chili and I am not just saying that because this is a post on beef. I genuinely like the taste a little better.

I think this is a good time to show you what I found at the local "Big Box" store while doing some shopping.

UNICORN POOP marshmallows by YUMMALLO


I was in the store and saw marshmallows called UNICORN POOP and I think it's beautiful marketing. It is so funny to me. I haven't looked into this company that makes these but they kind of make me think of marshmallow Peeps but not as cute. I didn't buy the Unicorn Poop but I did find another bag of marshmallows that I decided to get.

Yummallo POPCORN Marshmallows


I found Popcorn marshmallows and decided to get those for my two little granddaughters. I think those are a little more appropriate than Unicorn Poop. They are made by the same company and I was curious to know what they tasted like. I have tried popcorn flavor taffy and I really like taffy. I thought the popcorn marshmallows would taste the same but they didn't have the same popcorn taste as the taffy. There was just a hint of popcorn flavor. Have you tried any of these marshmallows?

After giving these marshmallows a taste I divided them up into sandwich bags for my granddaughters. When I took these marshmallows to them they seemed happy to have them. It's the little thing I do with my grandkids. I want them to always remember their "Papaw" giving them marshmallows. Is that silly?

Well, I want to finish up by saying I will probably give the White Chicken Chili a try this weekend. Maybe share it with family and see what they think of it. It has turned cold here in the Ozarks right now and soup and chili seem to hit the spot for me.

Tortilla Soup Easy Recipe

Tortilla Soup Easy Recipe - (Soups, Mexican Food)

Ingredients:

1 pound boneless, skinless chicken breast
2 cups water
1 (14 1/2 oz.) can beef broth
1 (14 1//2 oz.) can chicken broth
1 (15 oz.) can diced tomatoes (or may substitute 10 oz. can RoTel diced tomatoes and green chilies)
1/2 cup chopped onion
1/4 cup chopped green pepper
1 (12 oz.) can whole kernel corn, drained
2 tablespoons taco seasoning mix (1/2 of 1 1/4 oz. envelope)
Tortilla chips, coarsely crushed (about 3 cups)
1 cup shredded Cheddar cheese (4 oz.)

Directions:

Cut chicken into 1-inch cubes, and set aside. In a large saucepan, combine water, beef and chicken broths, undrained tomatoes, onion, and green pepper. Bring to a boil, add chicken, and reduce heat. Simmer, covered, for 10 minutes. Add corn and taco seasoning. Cover and simmer for 10 minutes longer.

To serve, place crushed tortilla chips into each bowl. Ladle hot soup atop. Sprinkle with shredded cheese. Makes 6 servings.

Thoughts On Tortilla Soup:

I don't know about you but I can eat soup all year around. It doesn't matter if it is hot outside I still like to eat soup, especially if it is great Tortilla Soup! I am a jalapeno lover so I like to add some fresh-cut raw jalapenos to my soup. If the jalapeno peppers are too hot for you then you can add some crushed red pepper. Where are my spicy friends? I know my last recipe was a Mexican dish but this falls into the soup category and I give myself a pass for posting it today.

Did you know that tortilla soup was invented in Tlaxcala the Mexican state? Tortilla soups is a staple food for the Mexican people. Every family may make it just a little different but it is a sure thing you just may find some sort of tortilla soup in their house. You can learn more about tortilla soup by visiting Slurrp.

My Thoughts:


Here is a picture of a pepper plant my mother bought for me for my birthday. I thought you would enjoy seeing a picture of it. My daughter put it in a bucket and has been watering it. I can't remember the name of this pepper but it turns red when it is ripe and it has a smokey flavor to it. I wish it was an heirloom plant so I could save the seeds and grow more. They grow really big and I love them.

It has been a busy week so far. I am looking forward to the weekend to try some new recipes. I have a friend where I work who shared with me some taco chicken. I am still trying to get that secret recipe. It tasted super. I do know there is taco seasoning in the chicken but there is also other ingredients as well. I think recipes should be shared. I don't understand "secret" recipes that people do not want to share with others. I could understand if it was a donut chain or fried chicken empire but just a regular recipe that you cook at home should be shared with the world.

I think this is a good place in this recipe blog post to mention something that I heard and I can get your feedback on what you would do in that same situation. I was at an apartment complex and the neighbors upstairs were being very loud. I heard yelling and they had their windows open for everyone to hear. I know you might expect me to tell you I heard a couple fighting but that is not what I heard. I heard a mother yelling at her four year old daughter. It wasn't just once but it went on and on. It was hard for me to listen to. Some of the things I heard made me want to go knock on her door and ask if everything was ok. Actually if I am completely honest I wanted to go yell at the woman for yelling at her child like she did. I didn't do anything. I just left and thought about it a lot this evening. I felt so sad for that little girl. Kids should not be spoken to that way. What would you do in that situation? I know this is a serious topic to share in a recipe blog post but this is also my personal blog where I share things in my life. Sour Cream Chicken Enchiladas Easy Recipe

Sour Cream Chicken Enchiladas Easy Recipe - (Mexican Food)

Ingredients:

1 dozen flour tortillas
2 cups shredded Cheddar cheese
3/4 cup chopped onion
1/4 cup margarine
1/4 cup flour
2 cups chicken broth
1 cup sour cream
1 (4 oz.) can chopped mild green chilies
2 cups cooked, chopped chicken

Directions:

Combine cheese, onion, and chicken in a bowl. Mix well. Place several tablespoons of mixture down the center of each tortilla and roll up. Place seam side down in a greased 13x9 inch pan.

In a saucepan, melt margarine, and blend in the flour. Add broth and cook until bubbly. Stir in sour cream and chilies. Heat through and pour over tortillas. Bake at 375 degrees for 30 minutes and pour over tortillas. Bake at 375 degrees for 30 minutes. Sprinkle extra cheese over the top and melt it as desired.

Thoughts On Sour Cream Enchiladas:

When I visit a tremendous Mexican restaurant I love to order chicken enchiladas. Well, the first thing I order from the waiter or waitress is corn chips and salsa. A nice drink goes well with the chips of course. Then after I have devoured the chips and drinks I like to order chicken enchiladas. There is something about the Mexican restaurant atmosphere that always gets me. They usually have some sort of Mexican music playing. Have you noticed that many Mexican restaurants have very decorative furniture? I just love the carved wooden chairs painted and finished to a shine.

Extra Information:

Enchiladas have an interesting history. Supposedly, they originated from the Mayan culture. Since corn was a regular food source for the Mayans they created tortillas to eat. The natural progression for the food would be chicken enchiladas. Over time the great-tasting dish made its way into Western food culture. My Thoughts:

I've been off work for the past five days and it has been the fastest five days off I've had in a while. Each day it seemed I had something I needed to accomplish. I go back to work Tuesday afternoon because I work nights right now and it was Labor Day weekend. I'll get back to how my Labor Day went but first I'll share an update on my daughter's cell phone.

I got her a new phone and all her personal information was erased from the old phone and put on her new phone. Most importantly, she has all her baking recipes on her phone now and can continue baking her cookies for the farmer's market. She is very excited about that. She did mention to me that now she realizes how important personal information is to her on her cellphone. She talked about how valuable smartphones are and it made me proud to hear her talk that way. Obviously, I am having her pay for her phone. It would be easy just to forget about it since my phone provider is letting me finance her a used phone but in the long run, it will help teach her more responsibility.

I did manage to sell a TV on Facebook Marketplace over the five days off. I delivered it to the person who purchased it and I helped set up the brand new Roku that came with the TV. My youngest daughter went with me to help deliver the TV. It was a 42-inch plasma-screen television. It is very heavy too. It was a good thing it had carry handles on the TV. I had another person on Facebook Marketplace show interest in a trumpet I have for sale. They agreed to buy the trumpet and we planned on meeting up. On the day we were supposed to meet up, they changed their mind and decided not to purchase the trumpet. It is very disappointing when that happens but that is part of selling things online and meeting with them in public.

I helped my daughter move some things to her apartment at her mom's place and finished up the weekend at my mom's house on Labor Day. She cooked us pork steaks, brats, deviled eggs, macaroni and cheese, baked Brussels sprouts, and chicken noodles. We also had apple pie and a cake she made. My daughter baked her famous chocolate chip cookies. It was a good time with family and good food for sure.

As a final thought, I am thinking of installing a wood pellet heat stove in my house. I heat with propane but would like to supplement with wood heat. I don't want to worry about a regular wood stove and buying precut wood from individuals. I think wood pellets would be easier and help with the propane bill. Last year propane cost almost $4 a pound. I will share more about this heating project and the general cost in the future.

Chicken Kiev Easy Recipe - Chicken Dishes

Chicken Kiev Easy Recipe - (Chicken Dishes)

Ingredients:

8 pieces boneless chicken breasts
About 2 green onions, chopped
1/2 cup butter, cut into cubes
Parsley flakes

Breading:
1 egg
2 tablespoons milk
1 cup flour
1 cup bread crumbs

Directions:

Place chicken between plastic wrap and lightly flatten out. Put butter cubes, green onions, and parsley flakes in the middle of each piece of chicken. Fold in the sides and roll up.

To bread, mix egg and milk in a bowl, and place flour and bread crumbs in individual bowls. Dip chicken in flour, then egg mixture, and then bread crumbs. Let chill for 4 to 5 hours or overnight.

To bake: Lightly brown in a skillet, then place in baking dish. Bake for 30 to 45 minutes at 350 degrees or deep fry.

My Thoughts:

Before I get to writing about this wonderful Chicken Kiev Easy Recipe, I need to vent a little in this post. It has been a good weekend but also a bad weekend. I had the pleasure of attending my 30-year High School reunion and seeing former classmates. It really was a great time. Not everyone showed up but the ones that did, came with smiles, hugs, and handshakes. We got to talk about old times and tell stories of crazy things we did as kids.

The classmate who organized the reunion brought a VHS television to play an old VHS tape another classmate had made on the last day of school. It was so much fun to watch the video and to see all of us as young kids again. We all laughed together. There was a taco bar and drinks as well. Cookies and other party favors were provided. One classmate I didn't even recognize. Honestly, it seemed to me that everyone just gets better looking with age and I made a comment that we all age like fine wine. It was the first school reunion I had attended after 30 years. I didn't make it before because I was busy living out of state and raising kids. I should mention I was hesitant to attend past reunions because I didn't graduate with my class. I was a high school dropout and was embarrassed about it. I also didn't attend past reunions because I felt other classmates would not want to include me because of not graduating with them.

I did make up for not graduating with my classmates as far as education is concerned. I got my General Education Diploma in 1992 actually one year before my class graduated. Then in 2006, I began my online college education while being a full-time husband, dad, and employee. It was nice to feel included by the reunion invitation. School kids do grow up and become great adults. Those great adults do invite others to come to visit and talk about old times. It was really nice and I am grateful.

That was the good part of my weekend. Now I need to tell you about the bad part of my weekend. I had listed a Ford F150 camper shell on the Facebook Marketplace. I measured out the camper shell at 80 inches but had listed it as an 8-foot camper shell. It is actually a 6-foot camper shell. Someone contacted me interested in purchasing it. It was a 3-hour drive for the potential customer. I agreed to meet him halfway and drove over an hour. When he looked at the camper shell he discovered that it was actually a 6 1/2 foot camper shell. He was disappointed and I was too. Unfortunately, the sale was not made and I am sure he was saying some choice words about me on the drive home. I immediately changed the listing to the correct size of the camper shell. It was a lesson learned for me and one I do not intend on making again.

My teenage daughter asked if she could go on a float trip today with my second daughter and her coworkers. I agreed and they left out early on their trip. I had a gut feeling that my teenage daughter should leave her phone at home. I had visions of her dropping it in the water or on the river's edge. After some overthinking, I decided not to say anything about her phone. You can imagine what happened. I got a text towards the end of the day from my second daughter that her little sister had lost her phone. I thought to myself that I should've listened to my parental intuition and had her leave the phone at home after all. Turns out she had tipped her kayak over and her phone went over in the water. It was in a waterproof case but it was too late. She could not find it but managed to find her shoes that were off her feet.

I now must call the phone store and cancel service on her cell phone. My teenage daughter also came home looking like a lobster. She is red on her face, arms, and legs. She had sunscreen but I think she did not have enough on her skin. There was an excessive heat warning for the whole state of Missouri and she was out there over 10 hours. I feel like I dropped the ball on listening to my intuition. If you are a parent, have you ever experienced this? If you are not a parent, I can tell you that as a parent you blame yourself for everything bad that happens to your children no matter what. What is the lesson learned here? For my daughter, it was wearing more sunscreen and keeping better care of her phone. For me, it was doing a little more thinking and coaching her more on making sure those things negative that happened do not happen again in the future.

Paella Easy Recipe - Chicken Dish

Paella Easy Recipe - Chicken Dish

Ingredients:

1 1/2 pound chicken, cut up (can use thighs and legs)
1/2 pound large shrimp
3/4 pound clams or mussels
1 medium-sized onion, chopped
1 medium ripe tomato, peeled
1 medium green pepper, chopped
1 clove garlic, minced
1 teaspoon chopped parsley
1 can pimentos
1 cup canned peas or frozen peas
1/4 cup olive oil
2 cups rice
1/4 teaspoon saffron
1 lemon, cut in wedges for decoration

Directions:

Saute the chicken in hot olive oil and then put in a casserole, covering the chicken with 4 cups of water. Boil for 15 minutes.

Meanwhile, saute the green pepper, onion, and garlic in a shallow skillet or pan. Add chopped tomato. Wash the seafood, peel shrimp if needed, and add the small clams to the skillet or paella pan. Add peas and pimento to the skillet or pan, then add saffron and chicken. Wash the rice and add to the pan. Cover the mixture with 4 cups of water or chicken broth. Stir until the ingredients are well mixed. Bring to a boil for 5 minutes and then leave on a low flame until rice is tender and dry (20 to 30 minutes). Decorate the finished dish with lemon wedges and pimento if desired.

Another method of cooking the rice is to boil it and place it in a preheated oven at 400 degrees Fahrenheit for 10 minutes, then turn the heat down to 300 degrees Fahrenheit for another 15 to 20 minutes. Remove pan from oven and cover for 5 minutes. Serves 6 to 8 people.

My Thoughts:

What a wild and busy work week. I didn't get to help my daughter with the local farmer's market the week, where she usually sells her baked goods. She had a dental appointment and it was during the time the market was open. We currently live about forty minutes away from the dentist's office. She has had the same dentist for years and I don't want to take her anywhere else. I pride myself and making sure my kids have good dental health. My daughter's wisdom teeth are coming in straight and no issues there so it looks like I won't have to worry about having her wisdom removed.

An update and what my daughter is wanting to do with her baking. She is saving money for a new countertop mixer. The mixer is not cheap but it is a good goal for her to reach and will make her baking for the farmer's market easier. She also wants to buy glass cookie jars to put her cookies in for display. A larger table would be good and she is definitely wanting that as well.

Oh, and I found out through social media that my sister had a car accident and totaled her Mercedes. She is ok but I'm a little surprised my mom did not let me know. Isn't it a big deal when a family member has a car accident? It's just my thoughts on the subject. 

More Information On Paella:

It is said that Paella was first cooked by Valencian farmers. Yep, Eastern Spain is where the dish originally came from. As you read in the recipe ingredients there's shrimp, mussels, and chicken. Old-timers use to put rabbit and duck meat in the dish as well. Original recipes have no seafood in them. It has evolved into what it is today because of time and culture. Spicy Buffalo Chicken Wings Easy Recipe

SPICY BUFFALO CHICKEN WINGS EASY RECIPE (Main Dishes, Chicken)

Ingredients:

2 to 3 pounds chicken wings, cut off the joint
3/4 stick margarine
1/2 cup cayenne pepper
1/4 teaspoon cumin
1/2 teaspoon black pepper
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon Mrs. Dash
red pepper flakes to taste

Directions:

Melt margarine: Add remaining ingredients. Dip wings in the sauce until thickly coated. Bake in a roasting pan in a 400-degree oven for 1 hour or until juices run clear. Turn once after cooking for 30 minutes. It may be served with Bleu cheese or Hidden Valley dressing. 

My Thoughts:

Every year as long as I can remember, it is a past-time for me to cook Buffalo Chicken wings. I do this for the Super Bowl Football game; it is so much fun. I don't always watch football and mostly like my state team. Don't be upset at me for that, but I guess you could say I am a low-key football fan.

My favorite part about the Super Bowl game is the halftime show and the commercials. Don't get me wrong, I enjoy watching the game. It is usually exciting to see. In the last few years, the halftime show has not been very good. Do you agree with me on this? I am sure others will agree with me.

I like to have a veggie tray with my Buffalo Chicken wings for the game too and some kind of dessert to eat like pie or cake. I'm not much of a drinker but a beer or two usually goes well at a Super Bowl party. Some people even wear their favorite team's jersey during the game. I think I would do that too if I bought a football jersey.

Time Magazine ran an article on the History of Buffalo wings and it is very interesting. Did you know the buffalo wing was invented in 1964? I didn't either until I looked it up. Do you remember when you first tried a buffalo wing? I wondered why they were called "buffalo wings" when I knew buffalo did not have wings. I'm goofy I know.

The Dancing Chicken Machine True Story - A Great Metaphor

 


I am a Generation X'er and grew up in the seventies, and eighties. One day my mom said we were going to the county fair. At the time I lived in East Texas. Needless to say my younger sister and I were very excited. I went to bed thinking about cotton candy and corndogs. I thought about all the rides I would attempt with bravery. Hopefully, they wouldn't make me sick after taking a whirl.

The county fair was your average fair. Food carts were set up, and all the odors in the air did nothing but excite me. Burning oil and rubber from the rides, a whiff of popcorn, funnel cakes, and corndogs mingled with the sweet smell of cotton candy was something I would wear home with me.

The people who operated the rides, "carnies" as they were called, always had a look about them that was both exhausting and exciting at the same time. They would yell out for riders to dare the adventure and bark at those who didn't follow safety rules. I always wondered what their lives were like working and traveling from one town to the next. Where did they sleep? Did they eat the fair food all the time? Maybe they ran to the local fast-food restaurant and grabbed a cheap meal.

When we finally arrived at the fair I couldn't get out of the car fast enough. I was told to stay close to my mother and it was torture to me because all I wanted to do is run and look at all of the sights only to stop briefly at each ride or food booth to fulfill the lust of my young eyes. On lucky occasions my mother had enough money to purchase an "all ride" bracelet that allowed me to ride any ride I wanted as many times as I could handle. On this trip, we only had a limited amount of tickets.

At the fair, there were tents set up in a row that featured various attractions like the BIGGEST COW IN THE WORLD or some drunk carnie that was dubbed THE HUMAN PIN CUSHION. The tent doors were closed but each time someone would enter or exit I would do my best to peek inside and discover what the fuss what all about. Try to see if I could make some confirmation about what was advertised by the tent entrance.

My step-father was a hunter and entered a turkey shoot contest. He had to hit a bullseye using a compound hunting bow and would win a frozen turkey. He felt it was worth the entrance fee but didn't win. No turkey for us that night. I could tell he was disappointed the same as my mother. Tickets weren't used to enter that shooting contest. Only cash was accepted. I was oblivious to the fact his loss meant he might not get that extra soda during his next work week. 

There was one giant tent that was free to go in and we all went inside as a family. I saw at least twenty different vending machines that were set up in a row. I quickly figured out why it was free to enter. Each machine was a little show you had to pump quarters into. It was a trick and we fell for it. I asked my mom if I could have some quarters from her purse. She dug in and pulled out a handful of change. I spied exactly what I needed. She sifted through the change and handed me three beautiful quarters. I ran as fast as I could to the machine I wanted to feed.

The machine I chose was one called THE DANCING CHICKEN and I was desperate to watch this fowl entertain me. I quickly pushed three coins into the machine. I was tingling with excitement. I peered through the glass of the machine and noticed a tiny piano in the corner. What was going to happen? Was the chicken going to come out and actually play me a song for the mere price of seventy-five cents? Would it be wearing a hat or a costume? I couldn't wait to find out.

Music began to play as soon as I heard the kerplunk of my coins. Over to the side of the machine was a little door that slid open. While the music was playing I saw a little red hen run out and quickly stop at the center of the machine. She was facing me and kicking her legs one after the other while the music played. I was in fact witnessing THE DANCING CHICKEN. It was real and the machine sign didn't deceive me. Very quickly the music stopped, and a few pieces of corn fell into a small dish by the door she ran from. She ran to the dish, gobbled the corn up, and jetted back inside the little room she nested in. The door slammed shut and the music stopped. That was it. I wanted to see the show again but that was all the money I had. I knew my mother wouldn't pull a magic pile of change from her purse to give me another dancing chicken show. I wondered if the little red hen anticipated the next few pieces of corn. I'm sure she certainly did. I would if I were a chicken in that show.

Today there are no more vending machines with animals in them ready to perform for a few pieces of food. I am sure the chicken was well fed and watered each day or that's what I hoped was the reality of the situation. Animal rights groups have made such shows a thing of the past. 

Years have passed and I have never forgotten THE DANCING CHICKEN I witnessed. I have recalled that childhood memory many times and it always brings me a good feeling. You know, one of those memories that you can never forget. This is one of those.

Now that I am a grown man and learned many lessons, I have made connections and understandings about that experience. I have given it a lot of thought and discovered some things about life and business that can connect to the little red hen who is no doubt past the plate to another dancer.

Now what I am going to share here is no disrespect to anyone or any position in life. It is merely an observation and my intention is to open you up to possibilities and opportunities in your life. If anything, I hope you find my true story a little humorous. Maybe you will leave a comment below and let me know what you think?

I have often thought about that dancing chicken while working various jobs. I have even compared myself to that chicken. I didn't view my job as a negative thing. I would get up every day, head to work, and do my little dance. At the end of the week, when the show was over I would get my few pieces of corn and run back home. I had my paycheck and was happy to get it. I had a purpose and it was fulfilling. I couldn't wait for the next few pieces of corn. Do you get the idea? Most people are just like that little dancing chicken and go through the motions just for a little bit of money each week. Most wish they had a few more pieces of corn to enjoy or share with others.

Please don't misunderstand me. I am not insulting anyone for just having a job and trying to make ends meet. My current job is more than just a job to me. I've done it most of my life and each job has taught me many things. I am just sharing my thoughts on mindset. Right now I work at a great job and get to help create beautiful products. I'm proud of that.

Let's go a little further in this thought process.

I didn't have the extra seventy-five cents to see the chicken again but I have thought about the person who owned all those machines with performing animals in them. I wonder if he or she had plenty of quarters. Surely they did because we were not the only family in the giant tent pushing quarters in machines. So that led me to another thought. I needed a dancing chicken machine! Then I could have plenty of quarters.

Here's the idea. When we go to a job we are like the dancing chicken, but what if you had your own machine? This is an entrepreneurial thought but instead of making just a little money, what if you had a business of your own that provided a great product or service to the public? You would no doubt reap the benefits of something like that.

Not everyone is a business person with the ambition of being an entrepreneur. That's ok and if you are content doing that then keep doing that to the best of your ability. I applaud you for doing what makes you happy and is rewarding. It takes time to learn the business and how to operate it. The good thing is we have the Internet today and unlimited amounts of useful information can help you. It is a learning process, and if you begin on the business journey you will make mistakes. If you completely fail you can always start another venture. You will take with you priceless business experience that will only help you succeed with something else. 

What hobbies do you have? Did you know that you can turn a hobby or an interest into a business? Just think about it. Do others enjoy the same hobby you have? They surely do. Then you can ask yourself how you can serve others that have the same hobby. Begin by asking what problems they have and coming up with a solution to their problem. Then go serve them by providing a product or service. They will thank you for it and gladly give you money in return.
