7-up Cake With Icing Recipe

7-up Cake With Icing Recipe - (Cakes)

Cake

Ingredients:

  • 1 box yellow cake mix
  • 4 eggs
  • 1 box vanilla instant pudding
  • 3/4 cup vegetable oil
  • 10 ounces 7-up

Directions:

Combine the first 4 ingredients, and beat until light and fluffy. Add 7-up and beat well. Bake in a well-greased 13x9-inch pan at 300 degrees for 40 minutes. Remove from oven and immediately pour over the icing.

Icing

Ingredients:

  • 2 eggs
  • 1 1/2 cup sugar
  • 1 stick margarine
  • 1 small can of crushed pineapple
  • 1 cup coconut flakes
  • 1 tablespoon all-purpose flour

Directions:

Combine all of the above ingredients except the coconut in a saucepan. Cook over low heat stirring constantly until thick. Remove from heat and add coconut. Pour icing over the hot cake.

Thoughts On 7-up Cake:

This cake has a great lemon-lime flavor and is great cooled in the refrigerator. If you don't like coconut you can leave the coconut flakes out of the icing recipe. This cake is great for gatherings of any size. It is sure to be a hit, especially for the 7-up fans.

Chocolate Scones!

It was a great Father's Day for me. My oldest daughter made Chocolate Scones for me. She said she would share the recipe with me and I will be glad to share her recipe with you too. They were delicious. My youngest daughter took me for a drive that night and we saw at least 6 deer along the way. I think we saw an opossum too. It is nice to see my daughter driving and I enjoy the ride. She is a great driver. I'm proud to be a dad of daughters. They are such a blessing.

Strawberry Jam Cake Recipe

Strawberry Jam Cake Recipe - (Cakes)

Ingredients:

  • 1 cup sugar
  • 3/4 cup butter
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1 cup strawberry jam

Directions:

Cream the sugar and butter. Add the eggs. Mix it well. Mix in the buttermilk and baking soda. Sift the flour and add alternately with the buttermilk. Add the jam and stir just enough to mix it well. Pour in an oblong pan and bake in a 350° oven until the cake turns loose from the sides. Test the cake with a toothpick.

You can use your favorite icing for this Strawberry Jam Cake. If you want to bake a layer cake you can bake two pans of the cake and layer strawberry jam between the layers. I love barbecue pulled pork!

This weekend I am excited to visit a local food truck. The food truck serves the best barbecue I have tasted. I worked with a young friend whose father is the same age as me and has worked in the construction business for most of his life. He is in his middle age now and has always had the dream of owning his own food truck. He loves to cook and enjoys cooking barbecue food.

Some time back he began building his food trailer. It looks great and has a back porch with a barbecue smoker to cook the meats.

My friend told me his father had some issues getting his food trailer approved by the local health department. Apparently, the local food is very strict. Long story short, the food trailer is up to code and my friend's dad is serving the public. I am looking forward to visiting this local food trailer and enjoying a barbecue pulled pork sandwich.

Karidopita Greek Spiced Walnut Cake Recipe

Karidopita Greek Spiced Walnut Cake - (Cakes)

Ingredients:

  • 1/2 cup butter or margarine (softened)
  • 1 cup sugar
  • 3 eggs (lightly beaten)
  • 1/4 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 2 cups ground walnuts

Directions:

Cream the butter, and slowly beat in the sugar. Stir in the eggs and milk; blend thoroughly. Sift together flour, baking powder, cinnamon, salt and cloves. Blend dry ingredients into the creamed mixture. Fold in walnuts. Pour batter into a greased 10-inch tube pan. Bake at 350 degrees for 35 minutes or until done. Remove from oven. Cool for 10 minutes. Remove from pan, and prick with a fork. Baste several times with Honey or Rum Glaze.

Honey Glaze

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • 2 tablespoons honey

Directions:

Combine sugar and water in a small saucepan. Bring to a boil, and stir in honey. Reduce heat, and simmer for 5 minutes. Remove from heat. Cool before pouring over the warm cake.

Rum Glaze

Ingredients:

  • 1/3 cup butter or margarine
  • 1/3 cup powdered sugar
  • 1/4 cup water
  • 1/2 cup white rum
  • 1 teaspoon butter-rum flavoring

Directions:

Combine butter, powdered sugar, and water in a small saucepan. Stir in rum and rum flavoring. Bring to a boil. Remove from heat. Pour over warm cake.

Thoughts On Karidopita Greek Cake:

This Greek Cake dessert is great for impressing someone who has never tried it. It is not overly sweet and the glaze complements the cinnamon flavor and cloves. The walnuts add a very nice texture to the cake and are traditional in the recipe. This cake is a great fall-time but can be served any time of the year because it is so delicious.

Let sleeping dogs lie.

This is my youngest daughter's dog. He is very small. He is also very sweet and spoiled. I am mostly to blame for him being so spoiled. He loves to lay on my lap and nap while I write. If you look up "lap dog" in the dictionary you will probably see this picture of him on my lap. You could say he is the "Poster Dog" for lap dogs. So when you read my posts there is a great chance this little dog is lying on my lap making it difficult for me to work. It's ok. I love that little dog.

I got to attend a birthday party today for a little relative. It was the 3rd birthday party for my great-nephew. He is a cool little guy and reminds me of his dad when he was that age. Kids and dogs grow too fast. I believe it is best to enjoy them when they are small and do our best to make them happy.

Daydream Pie Recipe - (Pies & Pastries)

Ingredients:

1/3 cup lemon juice
1 can sweetened condensed milk (14 ounces)
1 Cool Whip (8 ounces)
1 graham cracker crust
1 can of pie filling of your choice

Directions:

Whip 1/3 cup of lemon juice and 1 can of sweetened condensed milk together until it is slightly stiff. Add the 8 ounces of Cool Whip and beat until stiff. Pour the mixture into the graham cracker pie crust and top with the pie filling of your choice. Chill in the refrigerator.

You are going to love the flavor of this pie! As I have mentioned in past posts, I love pie almost as much as I love cake. If you make this pie and share it with a friend, it is sure to get compliments. It is very easy to make this no-bake pie. Dolly Parton Yellow Cake Mix

My youngest daughter asked me to pick up a box of yellow cake mix. She wanted to bake a cake. When I was at the store I saw a yellow cake mix by Duncan Hines. It was a Dolly Parton's Yellow Favorite cake mix. I can't help but think how business-minded Dolly Parton is. I live near Branson, Missouri and I am familiar with Dolly Parton's Stampede in Branson. It is a dine-in rodeo show. I could create a pretty good-sized list of all the businesses she has. Dolly is an icon in entertainment and business. I have visited Dollywood in Tennessee and the park is very similar to Silver Dollar City in Branson, Missouri.

I have to mention that the cake turned out very good. My daughter is a great baker and the three-layer cake she baked tasted great. My daughter made the icing herself and it made the cake so much better. I took one taste of the icing and I was amazed. It was the BEST icing I have ever tasted. I am not exaggerating at all. My wife said the same thing. I asked my daughter if she had the icing recipe written down. I asked her if she wanted me to share the white icing recipe and she quickly said no. I am of the opinion that recipes are meant to be shared but there are two types of people when it comes to recipes. There are those who think recipes should be shared and then those who want to keep them secret. I understand that my daughter made her own recipe and all recipes come from somewhere. If she ever shares her white icing recipe I will be sure to share it here.

Kahlua Cake Recipe

Kahlua Cake Recipe - (Cakes)

Ingredients:

1 package (18.25 ounces) German chocolate cake mix
2/3 cup Kahlua liquor
1/3 cup vegetable oil
1 tablespoon grated orange rind
3 eggs

Directions:

Combine the cake mix, Kahlua, oil, orange rind, and eggs in a large bowl. Beat for 2 minutes at the highest speed of the electric mixer. Line the bottom of 2 greased 9-inch round cake pans with waxed paper. Pour batter into pans. Bake at 350 degrees for 30-35 minutes. Remove the cake from the pans, and cool it on the rack. Spread the filling between the layers and frost the cake.

Did anyone say cake? Cake is one of my favorite desserts and it is very difficult for me to pass a piece of cake by. Even if it is the store-bought birthday cake for someone in the work breakroom, I must get a piece.

German chocolate cake is a great cake and this recipe calls for Kahlua. The Kahlua has a dark chocolate flavor, and other flavors such as sweet butter, black coffee, roasted chestnut, and vanilla. Kahlua is a great-tasting liquor and adds a nice flavor to the German chocolate cake. The alcohol cooks out but you know that.

Box turtle

Living in Southwest Missouri it is not uncommon to see box turtles. They come out in the spring to forage and mate. They eat vegetation to prepare for their winter hibernation. They get on the roads a lot and often times I have to dodge them while driving.

My oldest granddaughter has been asking her mom for a turtle. Today this turtle showed up in my yard. I believe it is a male box turtle. From what I understand, the males have bright colors and the females are mostly brown. I know my granddaughter will be very excited to receive her new pet. It will be a great educational opportunity to learn about box turtles, how to care for them, and experience letting the turtle go for the winter hibernation. I kept box turtles during the warm months when I was young and it was always fun.

White Texas Sheet Cake Easy Recipe - (Cakes)

Ingredients: (cake)

1 cup butter (melted)
1 cup water
2 cups sugar
2 eggs
1/2 cup sour cream
1 teaspoon almond extract
1 teaspoon salt
1 teaspoon baking soda

Directions: (cake)

Heat the 1 cup of butter. Mix all of the cake ingredients together. The Mix will appear runny. Bake at 375 degrees for 20-22 minutes.

Ingredients: (Icing)

1/2 cup butter (melted)
1/4 cup milk (warmed)
4 1/2 cups powdered sugar
1/2 teaspoon almond extract

Directions: (Icing)

Heat the butter and milk. Add the powdered sugar and almond extract. Mix well. Pour over hot cake. You can top with 1 cup of chopped nuts if desired.

A great opportunity came my way when a friend of mine offered to share some deer summer sausage. I currently live in Southwest Missouri and we have plenty of deer here. Many people enjoy hunting for deer and eating venison in many different ways. This particular venison was made into summer sausage with peppercorn and mustard seed. Heath Bar Cake Easy Recipe

Heath Bar Cake Easy Recipe - (Cakes)

Ingredients:

1 angel food cake (ready-made is fine)
6 crushed Heath bars
2 cups heavy cream
1 jar caramel/butterscotch sauce (10.4 ounces)

Directions:

Slice the cake horizontally into 3 layers. Whip the cream until it is stiff, and add sauce slowly. Ice each layer with the mixture and sprinkle with candy crumbs. Ice top & sides after the cake is back together. Refrigerate for 6 hours or overnight.

Pork Steaks

I feel I am a little late in getting the grill out and cooking great-tasting meats but I had a craving to make the time. I wanted to cook pork steaks. To me, the taste of charcoal-grilled pork steak is very nostalgic. I have great memories of my family cooking pork steaks. It was a great summertime for the family. The cookout would usually include canned pork and beans, BBQ chips, potato salad along green beans.

I have mentioned in previous posts I love using Tony Chachere's Creole Seasoning and I use that seasoning on my steaks and black pepper as well. The taste is terrific and I would suggest you try it. You will want to lightly sprinkle the creole seasoning as it can be very salty. The combination is wonderful.

Spanish Coffee Cake Easy Recipe

Spanish Coffee Cake Easy Recipe - (Cakes)

Ingredients:

2 1/2 cups flour (sifted)
3/4 cup white sugar
1 cup brown sugar
3/4 cup cooking oil
1 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon soda
1 teaspoon baking powder
1 egg
1 cup buttermilk
1/2 cup walnut meats

Directions:

Mix the flour, white sugar, brown sugar, salt, cinnamon, and cooking oil, until crumbly mixture. Save 1/2 cup of this crumbly mixture for the topping. To the crumbly mixture add, soda, baking powder, egg, and buttermilk. Mix well and beat for several minutes with an electric mixer. Pour into a greased and floured baking pan. Take the 1/2 cup of crumbly add the 1/2 cup of walnut meats and sprinkle over the cake batter. Bake at 325 degrees for 40 to 50 minutes.

My Thoughts About Spanish Coffee Cake:

I enjoy a good cup of coffee and having a piece of Spanish Coffee Cake seems right. The cinnamon crumble on top mixes so well with the cake. Invite a coffee fan over and serve this cake with a cup of coffee. I would be willing to bet you will see a big smile on their face after they take a bite. The simplicity of this cake and crumble topping is very tasty for the cinnamon lover.

A new seasoning for me!

I was in the store getting some things and found this new seasoning. I love cajun seasoning and have never tried this one. I will have to come up with some good recipes for you incorporating this season. My go to seasoning is Tony Chachere's Creole seasoning and I have been using it for some time but I am excited to try this Slap Ya Mama. The name is funny and eye catching but slapping my mama would only get me in trouble for sure. I haven't asked my mama but I don't think she would like the name of this new cajun seasoning I've found.

Choco-Holic Ho Ho Cake Easy Recipe

Choco-Holic Ho Ho Cake Easy Recipe - (Cakes)

Ingredients:

2 2/3 cup flour
2 cups sugar
6 tablespoons cocoa
2 tablespoons vinegar
2 cups water
2 teaspoons vanilla
2 teaspoons baking soda
1 teaspoon salt
12 tablespoons oil or 3/4 cup

Directions:

Mix together ingredients. They will be runny. Bake at 350 degrees for 30 to 35 minutes.

Middle Layer: (Directions)

Cook until thick... 
5 tablespoons flour
1 1/4 cups milk stirring constantly
Cool - (keep covered)
After cooled add to the cream mixture

Cream Mixture:

1 cup sugar
1/2 cup butter
1/2 cup Crisco

Spread the flour/cream mixture over the cake. Cool in the refrigerator while preparing icing.

Icing:

1/2 cup butter
Melt 3 ounces of square unsweetened chocolate

Add:
1 tablespoon vanilla
1 egg
2 1/2 tablespoons hot water
1 1/4 cup powdered sugar

Icing will continue to be runny. Pour over the top of the cake. Then refrigerate. 

My Thoughts On Choco-Holic Ho Ho Cake:

I love the Hostess Ho Ho's but this recipe takes the cake! Literally! It is an easy recipe with three steps but you will be glad when you cut yourself a piece of this chocolate lover's delight. If you like coffee it would go great with it too. You will be sure to win some people over with this recipe.

Extra Information For You:

Mr. McKee started selling 5-cent cakes in 1933. Then in 1935, he came out with the Oatmeal Creme Pie. Since then, the family has been selling great dessert cakes. Hostess has the Ho Ho's and The Little Debbie company has the Swiss Roll. They are comparable and both are tasty. My daughter asked me recently if we could make a fire. It is such a great thing to do and a great excuse to roast hotdogs and marshmallows over the fire.  I had to get some beef hotdogs because they are the best tasting in my opinion and some marshmallows. I found some graham crackers with cinnamon and sugar on them along with a Hershey's milk chocolate bar for making smores. I only had one but it was so good.

I had some wood logs left over from last year that I purchased from the store. I don't live in the country so I am forced to buy wood for the firepit. I do live in town and have some trees that create small wood in the yard but I use that for getting the fire started. 

An Update On My Wood Pellet Stove:

I got the hole cut in my chimney to run my metal stovepipe through for the exhaust. I figured out how to get cool air from outside based on the location of my wood pellet stove. I am drilling a hole in the floor behind the wood stove and running my intake hose under the house using a plastic pipe. The pipe leads to the vent in the side of my house and is almost exactly where I need it. It will work out great and I am going to be posting more pictures as I get it installed.

Today I am going to the Lowe's store. I will be looking at more exhaust pipe to complete the job and a stove plate to sit the wood pellet stove on. The idea for the stove plate is to catch any ashes that might fall out of the stove and to help protect the floor under the stove as well.

It is 57 degrees today so it is a little cooler and I had to put on my pullover hoodie. I think it will be warmer tomorrow and will give me a chance to work on installing the cool air intake system I have designed.
