I have always liked any casserole that has meat and potatoes in it. The mashed potatoes and meat mixed the way it is in this recipe is one of my favorites. It makes me think of tater tot casserole. A personal preference of mine is to have cheese with any potato and meat recipe.

Potato Hamburger Pie Casserole Recipe - (Casseroles)



Ingredients:



  • 1 onion (chopped)
  • 2 tablespoons shortening
  • 1 pound ground beef (browned)
  • 1/2 teaspoon salt
  • 1 egg (beaten)
  • 1 teaspoon pepper
  • 1 cup peas (cooked)
  • 1/2 cup catsup
  • 1 cup canned tomatoes (drained)
  • 3 cups mashed potatoes (hot, seasoned)



Instructions:



  1. Cook chopped onion in hot shortening until it is golden brown.
  2. Add the meat and seasonings.
  3. Cook until the meat is light brown.
  4. Add peas, tomatoes, and catsup.
  5. Mix well.
  6. Pour into a greased 2-quart casserole dish. (Large dish if doubled)
  7. Combine mashed potatoes and egg.
  8. Spoon to form mounds or spread over the mixture.
  9. Bakin in a moderate oven at 350 degrees for 20 to 30 minutes.

Pulled-pork barbecue sandwich!



Yesterday I stopped by one of my favorite barbecue food trucks. They are located in Marshfield, Missouri. If you are a local, you probably know about this food truck. If you are traveling through and they happen to be open, you will love their food. They have great sauce but you will not need it. The smoked meat is so delicious and tasty you will want to savor every bite.



I had onion and pickles on my sandwich. The onion breath is worth it! They are such good hardworking people and I love to support them. It is so inspiring to see people start a business that serves the community. The entrepreneurial spirit is alive in people. I believe it is good to support local small businesses. They are so important to our community and give people more choices. 



The big-box store was hosting a local car show and made the barbecue truck set up on the side of the parking lot instead of in front of the entrance. This made the food truck traffic slower than normal. Shame on you big-box store! Maybe I shouldn't be so negative about it but these are great people with a great food product. Why place them aside where traffic is slower? I don't get it.

My Thoughts On Mocha Cheesecake Delight:



Many cheesecakes are baked but this cheesecake is placed in the freezer for 6 hours to set. It's cold, full of chocolate, and coffee. It will give you a great sugar kick you'll want more of. Chocolate cookie crumbs, raspberries, and mint are used for this recipe but you can use chocolate shavings and cherries if you like that better. You can also use chocolate syrup to drizzle on top. Have a cup of hot Mocha coffee with this cheesecake to really kick it up a notch.

Mocha Cheesecake Delight Recipe - (Desserts) 6-10 servings



Ingredients:



  • 1 1/4 cups chocolate cookie wafers (24 cookies, finely crumbled)
  • 1/4 cup sugar
  • 1/4 cup butter or margarine (melted)
  • 1 package cream cheese (softened)
  • 1 can sweetened condensed milk (14 ounces)
  • 2/3 cup chocolate syrup
  • 2 tablespoons instant coffee
  • 1 teaspoon hot water
  • 1 cup heavy whipping cream (whipped)
  • Additional cookie crumbs for garnish



Instructions:



Combine the cookie crumbs, sugar, and butter in a small bowl. Press the combination into the bottom of a 9-inch springform pan. Chill in the refrigerator. In a large bowl, beat the softened cream cheese until it is fluffy. Add the condensed milk and chocolate syrup to the cream cheese. Dissolve the instant coffee in the hot water and stir it into the cream cheese mixture. Fold in the whipped cream. Pour the mixture into the springform pan, cover, and freeze for at least 6 hours or overnight. Garnish your Mocha cheesecake with the additional cookie crumbs.

Oriental Skillet Supper Recipe

Oriental Skillet Supper Recipe - (Asian Food)

Ingredients:

  • 1/2 cup green bell pepper (cut into strips)
  • 1/3 cup celery (cut into slices)
  • 1 tablespoon olive oil
  • 1/2 pound minute steak or stew meat (cut into 1/4 inch cubes)
  • 1/3 cup cold water
  • 1 tablespoon soy sauce
  • 2 teaspoons corn starch
  • 1/4 teaspoons salt
  • 1 medium tomato (cut into wedges)
  • 1 cup cooked rice (hot)

Directions:

In a hot skillet cook quickly the green pepper and celery in oil until tender. Remove vegetables and add meat to hot skillet. Brown quickly. Combine the cold water, soy sauce, cornstarch, and salt, and add to the skillet. Cook and stir until the mixture thickens. Add the green pepper, celery, tomato, and heat thoroughly. Serve over hot rice.

This recipe is perfect for two people. If more is needed you can double the recipe. Sprinkle with sesame seeds if desired. If you like this recipe a little sweeter, add 1 teaspoon of sugar. The sugar will make this dish taste like it came from an Asian restaurant.

Excellent pulled pork!

I love barbecue! One of my favorite places to get barbecue is at a local food truck. The food they make is so good and they have good prices. The barbecue is honestly some of the best I have ever tasted. I have written about this business in the past. This food truck serves the Webster County area and the locals are happy about it. The city does not have a barbecue restaurant so KETTLE & QUE fills a demand for great tasting food.

You can Follow or Like KETTLE & QUE's Facebook page so you will never miss a notification when they are open and their location. They are actually a food trailer but I don't know the technical term for it. Any ideas?

I stopped by the food truck this weekend and bought a pulled pork sandwich. My youngest daughter drove me because she likes driving and I had to pick up some things at the Big Box store. She had a turkey sandwich and said it was the best turkey she ever had. That is a big compliment because I can cook a tasty turkey. I picked up a pulled pork sandwich for my wife too. She loved it!

When I cook barbecue I like to cook it in the Instapot and add barbecue sauce when it's dished out. The Instapot makes the process quicker for me.

Strawberry Jam Cake Recipe

Strawberry Jam Cake Recipe - (Cakes)

Ingredients:

  • 1 cup sugar
  • 3/4 cup butter
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1 cup strawberry jam

Directions:

Cream the sugar and butter. Add the eggs. Mix it well. Mix in the buttermilk and baking soda. Sift the flour and add alternately with the buttermilk. Add the jam and stir just enough to mix it well. Pour in an oblong pan and bake in a 350° oven until the cake turns loose from the sides. Test the cake with a toothpick.

You can use your favorite icing for this Strawberry Jam Cake. If you want to bake a layer cake you can bake two pans of the cake and layer strawberry jam between the layers. For added appeal simply cut fresh strawberries in half and place them on top of the iced cake. Another idea is to layer the top with strawberry jam instead of icing the cake and then place fresh-cut strawberries on top. You are only limited by your imagination.

I love barbecue pulled pork!

This weekend I am excited to visit a local food truck. The food truck serves the best barbecue I have tasted. I worked with a young friend whose father is the same age as me and has worked in the construction business for most of his life. He is in his middle age now and has always had the dream of owning his own food truck. He loves to cook and enjoys cooking barbecue food.

Some time back he began building his food trailer. It looks great and has a back porch with a barbecue smoker to cook the meats.

My friend told me his father had some issues getting his food trailer approved by the local health department. Apparently, the local food is very strict. Long story short, the food trailer is up to code and my friend's dad is serving the public. I am looking forward to visiting this local food trailer and enjoying a barbecue pulled pork sandwich.

Dutch Oven Barbecue Beef Recipe - And My Special Pork Steak Seasoning

Dutch Oven Barbeque Beef Recipe - (Main Dishes, Beef)

Ingredients:

1 rump roast (3-4 pounds)
1 onion (medium, sliced)
1 teaspoon celery salt
1 teaspoon. Worcestershire sauce
1/4 teaspoon Tabasco sauce (or to your taste)
1/2 teaspoon garlic powder
1 tablespoon chili powder
1 bottle catsup (14 ounces)
1-2 tablespoons brown sugar
Hamburger buns

Directions:

Place the rump roast in the Dutch oven. Combine the remaining ingredients, except the hamburger buns, and pour it over the rump roast. Cover the Dutch oven and bake at 250 degrees for 3 1/2-4 hours or until the meat is tender. Cool the meat slightly, cut into thin slices, and serve on hamburger buns.

Dutch ovens are great to bake and cook with. This recipe cooks the rump roast slowly and seals in the juices along with a great aroma because of the special barbecue sauce mix. I love barbecue beef any time of the year. You can make this recipe all year round because it is baked in the oven. If you have a grill with a good thermostat that will work great for outdoor cooking. This recipe can be served with potato salad or baked beans. In the Southern parts of the United States coleslaw is served on top of the barbecue sandwich. I first learned about coleslaw in barbecue in West Tennessee. It actually tastes great!

I love cooking out on the charcoal grill. I know propane is quicker but I love the charcoal flavor that gets into the meat. I bought pork steak and seasoned it my special way. I am glad to share what I use here. In past posts, I have mentioned how much I like Tony Cachere's Creole seasoning. That's my secret for pork steak. I begin by sprinkling black pepper on my steaks and then follow up with Tony Cachere's Creole seasoning. I rub it in the meat really well and I carefully season the whole meat. Not too much but completely seasoned. My pork steak has a spicy taste to it so if you have delicate taste buds you might want to use less. You just have to experiment.

The beans, coleslaw, macaroni salad, and potato salad were all store-bought. It is the holiday weekend Memorial Day on Monday so I am sure we will eat more food like this before going back to work.
