I have always liked any casserole that has meat and potatoes in it. The mashed potatoes and meat mixed the way it is in this recipe is one of my favorites. It makes me think of tater tot casserole. A personal preference of mine is to have cheese with any potato and meat recipe.

Potato Hamburger Pie Casserole Recipe - (Casseroles)



Ingredients:



  • 1 onion (chopped)
  • 2 tablespoons shortening
  • 1 pound ground beef (browned)
  • 1/2 teaspoon salt
  • 1 egg (beaten)
  • 1 teaspoon pepper
  • 1 cup peas (cooked)
  • 1/2 cup catsup
  • 1 cup canned tomatoes (drained)
  • 3 cups mashed potatoes (hot, seasoned)



Instructions:



  1. Cook chopped onion in hot shortening until it is golden brown.
  2. Add the meat and seasonings.
  3. Cook until the meat is light brown.
  4. Add peas, tomatoes, and catsup.
  5. Mix well.
  6. Pour into a greased 2-quart casserole dish. (Large dish if doubled)
  7. Combine mashed potatoes and egg.
  8. Spoon to form mounds or spread over the mixture.
  9. Bakin in a moderate oven at 350 degrees for 20 to 30 minutes.
