Kielbasa and potatoes with cheese


A friend at work shared a dish she put together. She always shares her food with us. She doesn't share every day but she does often. We are very grateful to eat the food she brings. The Kielbasa and potatoes is not a written recipe. She said it was something that she put together because she had the ingredients and needed to make something for the week.

There is not a good segue into what I want to share with you. I received news from one of my daughters. She is a deli-manager at a local restaurant. She told me they are closing the doors. I am sad to hear this. I hate it that she will be losing her job. She enjoyed her deli tasks and made good work friends.

The local restaurant has been open for many years. The restaurant was shut down last year for over 6 months for remodeling. I heard the cost of remodeling caused a great amount of debt and that is the reason for closing the business now.

My daughter will have to look for a different job. I know that feeling well. I lost a job many years ago at a company I was planning to stay with until retirement. They moved the company to Mexico. I was very disappointed too. I was left to looking for a different job that I could work at.

One things that never changes about life is that there is always change. We must learn to pivot and adjust our sales. We do the best we can do.

My Thoughts On Chicken Enchiladas:



When I go to a Mexican restaurant, if I do not order beef enchiladas, I order chicken enchiladas. I also love the steak burritos if they are available. What I love most about chicken enchiladas is the seasoning flavor that is put into the chicken when it is cooked. The chopped chilies and creamy sauce added with melted cheese tops it off. I must have corn chips and cheese with my chicken enchiladas. Are you craving this food yet? This is a great recipe if you are in the mood for a Mexican dish. Chicken Enchiladas Recipe - (Mexican Food)

4-6 servings



Ingredients:



  • 1 whole chicken (2 1/2-3 pounds, skinned, boneed and cooked, you can use a pre-made rotisserie chicken for this)
  • 1 package cream cheese (8 ounces)
  • 1 can RO-TEL (diced tomatoes and green chilies)
  • 8 flour tortillas (8-inch)
  • 1 sour cream (8 ounces)
  • 1 cup Cheddar cheese (grated)
  • Chopped scallions
  • Sliced ripe olives


Instructions:



Dice the chicken. Combine the cream cheese and 1/2 can RO-TELL in a saucepan. Cook it over low heat until the cheese melts. Stir in the chicken, and cook until it is heated through. Place about 3 tablespoons of chicken mixture down the middle of each tortilla. Roll the tortilla tightly, and place them in a single layer in a shallow baking dish. Combine the sour cream and the remaining RO-TEL. Cook it over low heat until it is warm. Pour it over the tortillas, and top it with grated cheese. Bake at 350 degrees for 20 minutes. Garnish with olives and scallions.

Taco Salad With Dressing Recipe - (Mexican Food)

I had a great sandwich today. I know it's not exciting content, but there is a story behind this sandwich. My second daughter is a deli manager at a local restaurant. The restaurant is closing down for a week because of the 4th of July holiday coming this week. They were going to throw out all the food and my daughter said she would take it. It was fresh food from the day and she thought it would be a waste to just throw the food away. All of the food on my sandwich was from the deli except for the ham. The ham came from a different deli.


My sandwich is made with bread heels and ends. There is bacon, lettuce, tomato, purple onion, pepper jack cheese, and mayonnaise. The mayonnaise came from my refrigerator. My daughter brings sandwich food from the restaurant often. It is a shame to waste good food.


This makes me think of the food waste in America. Our country throws out so much food. We waste more food than any other country in the world. It is an estimated 60 million tons of food wasted each year. The food is worth almost $220 billion a year. Imagine how many people that would feed. Understandably, not all food waste is consumable but there is a lot of food that could be good. Maybe most of it.

My Thoughts On Taco Salad With Dressing Recipe:


This Taco Salad recipe is a great one! The real secret is in the dressing. It is a special mix of picante or taco sauce and a particular dressing. The combination is up to you, but whatever you choose, you will love it. Taco Salad is a super meal and it makes a fun choice when celebrating Cinco de Mayo. I enjoy taco salad with crushed nacho chips or Fritos and it is especially good in a fried taco bowl.


Taco Salad With Dressing Recipe - (Mexican Food) 8-10 servings


Ingredients:


  • 1 head lettuce
  • 1 large tomato (chopped, optional)
  • 6 scallions (chopped)
  • Sharp Cheddar Cheese (8 ounces, grated)
  • 1 package tortilla or nacho chips (10 ounces, coarsely crushed)
  • 1 pound ground beef or ground turkey
  • 1 can red beans (15 1/2 ounces, drained)
  • 1 package taco seasoning (1.25 ounces or closest to measure)
  • 1 jar picante or taco sauce (you choose)
  • 1 bottle Russian Dressing or Western Dressing (you choose)


Instructions:


Break the lettuce into bite-size pieces. Place the lettuce in a large mixing bowl. Add chopped tomatoes, chopped scallions, grated cheese, and the naco chips to the bowl. Toss the contents lightly. In a medium skillet, brown the beef or turkey; add the beans and taco seasoning, and simmer according to the directions on the taco seasoning packet. When you are done, pour the cooked meat over the lettuce mixture. Toss the salad gently. Mix in the picante or taco sauce and the Russian or Wesern dressing. Gently toss the salad gently with everything together or you can serve the salad and dressing separately.

Taco Pie Recipe

Taco Pie Recipe - (Mexican Food)

Ingredients:

1 unbaked 9-inch pastry shell
1 pound lean ground beef
1/2 cup onion (chopped)
1 tablespoon beef bouillon granules (or 3 beef bouillon cubes)
1 can refried beans (16 ounces)
1 can green chilies (4 ounces, chopped and drained)
1/4 cup tomato sauce
Sour cream
Shredded Cheddar or Monterey Jack cheese
Shredded lettuce
Chopped tomato

Directions:

Preheat the oven to 425 degrees. Bake pastry shell for 8 minutes. Remove the shell from the oven and set it aside. Reduce the heat to 375 degrees. In a large skillet, brown the meat with the onion and bouillon. Stir the mixture until the bouillon dissolves. Remove the skillet from heat and stir in the beans, chilies, and tomato sauce. Pour the skillet contents into the pastry shell. Bake for 20-25 minutes or until it is bubbly around the edges. Let it stand for 10 minutes. Garnish with cheese, lettuce, tomato, and sour cream.

I love Mexican food and if you are craving a great Mexican flavor dish, this recipe will do it for you. I am also a huge fan of tacos. You may have noticed that taco seasoning is not included here but if you want more of a taco flavor you can add it. It would be good to try both variations and let me know what you like best.

Taco Pie was first noticed in the recipe world in the 1970s. Most everyone who tries this tasty Mexican-themed dish loves it. You can use ground turkey instead of ground beef if you like. If you trade ground beef for ground turkey, I suggest adding 1 packet of taco seasoning to the meat while cooking to give it a better flavor. Dollar General Store Coffee Maker

At my house, we run the coffee maker every day. When I was growing up coffee was always brewing at my grandparent's house. When visitors came they were always offered coffee to drink. I took the tradition of brewing coffee just about every day as an adult. I have been considering purchasing a water softener for my home. It would probably be a good idea.

The water in this area is full of lime and very hard water. I should use distilled water for making coffee but we just use our city tap water. The city tap water here is treated to a minimum. We always keep vinegar in the house and if I run a little vinegar through the coffee pot regularly the coffee pop lasts for a good length of time. Sometimes I forget and the coffee pot heating element clogs with lime. The lime makes the coffee pot brew very slow. I have owned a Bunn coffee maker in the past and it lasted a long time because the water stays heated in the water chamber.

So here's what I do. I just buy a cheap 20-dollar coffee maker from the Dollar general store and when it goes bad I just throw it out. I really need good coffee maker tips and suggestions about getting a good coffee maker. Can you help me?

Taco Burger Pizza Easy Recipe

Taco Burger Pizza Easy Recipe - (Main Dishes, Beef)

Ingredients:

1 pound ground beef
1 package (1-1/4 ounce) taco seasoning mix
1/2 cup water
2 (8-ounce) cans of refrigerator biscuits
8 ounces can of tomato sauce
1/2 cup (6-ounce) shredded cheddar cheese

Directions:

Grease a 12" pizza pan. In a large skillet brown the beef and drain. Stir in taco mix and water; simmer while preparing crust. Separate the dough into 20 biscuits. Press over the bottom and upside of the pan. Spoon hot meat over the crust. Spread tomato sauce over meat, and sprinkle with cheese. Bake at 400 degrees for 15-20 minutes.

Texas Fajitas - (video below)

It was a good Mother's Day yesterday. We celebrated at El Patron Mexican Grill in Seymour, Missouri. We had Texas Fajitas with queso, corn chips, and guacamole that was made fresh. The Texas Fajitas included chicken, beef, and shrimp. The atmosphere was very nice and they had plenty of decorations inside. The outside of the restaurant had a small decorative water mill. It didn't have water in it but it was very nice to look at. The tree outside next to the entrance had beautiful flowers on it. I created a video of our visit to El Patron on my YouTube channel called El Patron Mexican Grill Seymour Missouri that you can see. Remember to subscribe, like, and leave a comment on my video. Tortilla Soup Easy Recipe

Tortilla Soup Easy Recipe - (Soups, Mexican Food)

Ingredients:

1 pound boneless, skinless chicken breast
2 cups water
1 (14 1/2 oz.) can beef broth
1 (14 1//2 oz.) can chicken broth
1 (15 oz.) can diced tomatoes (or may substitute 10 oz. can RoTel diced tomatoes and green chilies)
1/2 cup chopped onion
1/4 cup chopped green pepper
1 (12 oz.) can whole kernel corn, drained
2 tablespoons taco seasoning mix (1/2 of 1 1/4 oz. envelope)
Tortilla chips, coarsely crushed (about 3 cups)
1 cup shredded Cheddar cheese (4 oz.)

Directions:

Cut chicken into 1-inch cubes, and set aside. In a large saucepan, combine water, beef and chicken broths, undrained tomatoes, onion, and green pepper. Bring to a boil, add chicken, and reduce heat. Simmer, covered, for 10 minutes. Add corn and taco seasoning. Cover and simmer for 10 minutes longer.

To serve, place crushed tortilla chips into each bowl. Ladle hot soup atop. Sprinkle with shredded cheese. Makes 6 servings.

Thoughts On Tortilla Soup:

I don't know about you but I can eat soup all year around. It doesn't matter if it is hot outside I still like to eat soup, especially if it is great Tortilla Soup! I am a jalapeno lover so I like to add some fresh-cut raw jalapenos to my soup. If the jalapeno peppers are too hot for you then you can add some crushed red pepper. Where are my spicy friends? I know my last recipe was a Mexican dish but this falls into the soup category and I give myself a pass for posting it today.

My Thoughts:


Here is a picture of a pepper plant my mother bought for me for my birthday. I thought you would enjoy seeing a picture of it. My daughter put it in a bucket and has been watering it. I can't remember the name of this pepper but it turns red when it is ripe and it has a smokey flavor to it. I wish it was an heirloom plant so I could save the seeds and grow more. They grow really big and I love them.

It has been a busy week so far. I am looking forward to the weekend to try some new recipes. I have a friend where I work who shared with me some taco chicken. I am still trying to get that secret recipe. It tasted super. I do know there is taco seasoning in the chicken but there is also other ingredients as well. I think recipes should be shared. I don't understand "secret" recipes that people do not want to share with others. I could understand if it was a donut chain or fried chicken empire but just a regular recipe that you cook at home should be shared with the world.

I think this is a good place in this recipe blog post to mention something that I heard and I can get your feedback on what you would do in that same situation. I was at an apartment complex and the neighbors upstairs were being very loud. I heard yelling and they had their windows open for everyone to hear. I know you might expect me to tell you I heard a couple fighting but that is not what I heard. I heard a mother yelling at her four year old daughter. It wasn't just once but it went on and on. It was hard for me to listen to. Some of the things I heard made me want to go knock on her door and ask if everything was ok. Actually if I am completely honest I wanted to go yell at the woman for yelling at her child like she did. I didn't do anything. I just left and thought about it a lot this evening. I felt so sad for that little girl. Kids should not be spoken to that way. What would you do in that situation? I know this is a serious topic to share in a recipe blog post but this is also my personal blog where I share things in my life. At any rate, I would love to hear from you about this recipe or anything else I write.

Sour Cream Chicken Enchiladas Easy Recipe

Sour Cream Chicken Enchiladas Easy Recipe - (Mexican Food)

Ingredients:

1 dozen flour tortillas
2 cups shredded Cheddar cheese
3/4 cup chopped onion
1/4 cup margarine
1/4 cup flour
2 cups chicken broth
1 cup sour cream
1 (4 oz.) can chopped mild green chilies
2 cups cooked, chopped chicken

Directions:

Combine cheese, onion, and chicken in a bowl. Mix well. Place several tablespoons of mixture down the center of each tortilla and roll up. Place seam side down in a greased 13x9 inch pan.

In a saucepan, melt margarine, and blend in the flour. Add broth and cook until bubbly. Stir in sour cream and chilies. Heat through and pour over tortillas. Bake at 375 degrees for 30 minutes and pour over tortillas. Bake at 375 degrees for 30 minutes. Sprinkle extra cheese over the top and melt it as desired.

Thoughts On Sour Cream Enchiladas:

When I visit a tremendous Mexican restaurant I love to order chicken enchiladas. Well, the first thing I order from the waiter or waitress is corn chips and salsa. A nice drink goes well with the chips of course. Then after I have devoured the chips and drinks I like to order chicken enchiladas. There is something about the Mexican restaurant atmosphere that always gets me. They usually have some sort of Mexican music playing. Have you noticed that many Mexican restaurants have very decorative furniture? I just love the carved wooden chairs painted and finished to a shine.

Enchiladas have an interesting history. Supposedly, they originated from the Mayan culture. Since corn was a regular food source for the Mayans they created tortillas to eat. The natural progression for the food would be chicken enchiladas. Over time the great-tasting dish made its way into Western food culture. My Thoughts:

I've been off work for the past five days and it has been the fastest five days off I've had in a while. Each day it seemed I had something I needed to accomplish. I go back to work Tuesday afternoon because I work nights right now and it was Labor Day weekend. I'll get back to how my Labor Day went but first I'll share an update on my daughter's cell phone.

I got her a new phone and all her personal information was erased from the old phone and put on her new phone. Most importantly, she has all her baking recipes on her phone now and can continue baking her cookies for the farmer's market. She is very excited about that. She did mention to me that now she realizes how important personal information is to her on her cellphone. She talked about how valuable smartphones are and it made me proud to hear her talk that way. Obviously, I am having her pay for her phone. It would be easy just to forget about it since my phone provider is letting me finance her a used phone but in the long run, it will help teach her more responsibility.

I did manage to sell a TV on Facebook Marketplace over the five days off. I delivered it to the person who purchased it and I helped set up the brand new Roku that came with the TV. My youngest daughter went with me to help deliver the TV. It was a 42-inch plasma-screen television. It is very heavy too. It was a good thing it had carry handles on the TV. I had another person on Facebook Marketplace show interest in a trumpet I have for sale. They agreed to buy the trumpet and we planned on meeting up. On the day we were supposed to meet up, they changed their mind and decided not to purchase the trumpet. It is very disappointing when that happens but that is part of selling things online and meeting with them in public.

I helped my daughter move some things to her apartment at her mom's place and finished up the weekend at my mom's house on Labor Day. She cooked us pork steaks, brats, deviled eggs, macaroni and cheese, baked Brussels sprouts, and chicken noodles. We also had apple pie and a cake she made. My daughter baked her famous chocolate chip cookies. It was a good time with family and good food for sure.

As a final thought, I am thinking of installing a wood pellet heat stove in my house. I heat with propane but would like to supplement with wood heat. I don't want to worry about a regular wood stove and buying precut wood from individuals. I think wood pellets would be easier and help with the propane bill. Last year propane cost almost $4 a pound. I will share more about this heating project and the general cost in the future.
