I am always surprised when I hear someone say they don't like lemon desserts or pies. I even love lemon flavor cakes. I had an aunt that ate raw lemons all the time. I don't know how she could do that because I think lemons are too sour by themselves, but I really like lemon flavor in foods. I even like lemon-flavored candy. The sweet and sour taste is good to me.

Lemon Meringue Pie Recipe - (Pies & Pastries)



Ingredients:



  • 1 baked pastry pie shell (9 inches)
  • 1 2/3 cups sugar
  • 6 tablespoons cornstarch
  • 1/2 cup RealLemon lemon juice
  • 4 eggs (separated)
  • 1 1/2 cup boiling water
  • 2 tablespoons margarine or butter
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon lemon rind (grated)



Instructions:



  1. Preheat oven to 350 degrees.
  2. In a heavy saucepan, combine 1 1/3 cups sugar and cornstarch.
  3. Add the lemon juice.
  4. In a small bowl, beat egg yolks; add to lemon mixture along with grated lemon rind.
  5. Gradually add water, stirring constantly.
  6. Over medium heat, cook and stir until the mixture boils and thickens, about 8 to 10 minutes.
  7. Remove from heat.
  8. Add margarine and stir until it is melted.
  9. Pour into the prepared pie shell.
  10. In a clean small mixer bowl, beat egg whites with cream of tartar to soft peaks.
  11. Gradually add the remaining 1/3 cup of sugar, beating until stiff, but not dry.
  12. Spread on top of the pie, sealing carefully to the edge of the pie shell.
  13. Bake for 12 to 15 minutes or until golden brown.
  14. Cool.
  15. Chill before serving.
  16. Garnish with lemon slices as desired.
  17. Refrigerate leftover pie.
