Karidopita Greek Spiced Walnut Cake Recipe

Karidopita Greek Spiced Walnut Cake - (Cakes)

Ingredients:

  • 1/2 cup butter or margarine (softened)
  • 1 cup sugar
  • 3 eggs (lightly beaten)
  • 1/4 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 2 cups ground walnuts

Directions:

Cream the butter, and slowly beat in the sugar. Stir in the eggs and milk; blend thoroughly. Sift together flour, baking powder, cinnamon, salt and cloves. Blend dry ingredients into the creamed mixture. Fold in walnuts. Pour batter into a greased 10-inch tube pan. Bake at 350 degrees for 35 minutes or until done. Remove from oven. Cool for 10 minutes. Remove from pan, and prick with a fork. Baste several times with Honey or Rum Glaze.

Honey Glaze

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • 2 tablespoons honey

Directions:

Combine sugar and water in a small saucepan. Bring to a boil, and stir in honey. Reduce heat, and simmer for 5 minutes. Remove from heat. Cool before pouring over the warm cake.

Rum Glaze

Ingredients:

  • 1/3 cup butter or margarine
  • 1/3 cup powdered sugar
  • 1/4 cup water
  • 1/2 cup white rum
  • 1 teaspoon butter-rum flavoring

Directions:

Combine butter, powdered sugar, and water in a small saucepan. Stir in rum and rum flavoring. Bring to a boil. Remove from heat. Pour over warm cake.

This Greek Cake dessert is great for impressing someone who has never tried it. It is not overly sweet and the glaze complements the cinnamon flavor and cloves. The walnuts add a very nice texture to the cake and are traditional in the recipe. This cake is a great fall-time but can be served any time of the year because it is so delicious.

Let sleeping dogs lie.

This is my youngest daughter's dog. He is very small. He is also very sweet and spoiled. I am mostly to blame for him being so spoiled. He loves to lay on my lap and nap while I write. If you look up "lap dog" in the dictionary you will probably see this picture of him on my lap. You could say he is the "Poster Dog" for lap dogs. So when you read my posts there is a great chance this little dog is lying on my lap making it difficult for me to work. It's ok. I love that little dog.

I got to attend a birthday party today for a little relative. It was the 3rd birthday party for my great-nephew. He is a cool little guy and reminds me of his dad when he was that age. Kids and dogs grow too fast. I believe it is best to enjoy them when they are small and do our best to make them happy.
