Lamb Cury Recipe - (Indian Food)

Quote For The Day:

"Cooking is multisensory. It's made for the eyes, the mouth, the nose, the ear, and the soul. No other art is as complex." — Pierre Gagnaire

My Thoughts For Today:

What is this?

My oldest daughter cooked homemade flour tortillas with her little girls and shared them with me. The flour tortillas are perfect and taste better than store-bought. I am happy to have these tortillas. I was craving a snack today and thought I would use the tortillas to make something to eat. I decided on fried eggs.

I placed two tortillas on a plate and spread some mayonnaise on each while my eggs cooked in the hot skillet. I like to cook fried eggs in butter. After the eggs were almost cooked hard I placed a piece of pepperjack cheese on each egg and put a lid over the skillet to melt the cheese.

While the cheese was melting I sprinkled a little Frank's RedHot Sauce on each tortilla. I then put an egg on each tortilla and sprinkled it with Slap Ya Mama Cajun Seasoning, folded the tortillas around the eggs, and held them together with toothpicks.

This is a very impromptu snack I threw together and I really don't have a written recipe for fried egg wraps I follow. I like to cook intuitively a lot. If I am craving something it is fun to throw it together as many would say. I do like to cook with lots of flavor so adding some sort of seasoning is a habit for me. I enjoy cooking quick snacks like this for other people and I almost always receive compliments. Maybe those who try my creations are just hungry.

Lamb Curry Recipe - (Indian Food)

Ingredients:

  • 3 pounds lamb meat (lean & cubed)
  • Vegetable oil
  • 1/4 cup butter or margarine (butter is best)
  • 1 large onion (finely chopped)
  • 1/4 cup flour
  • 2 teaspoons curry powder
  • 4 cups beef consomme
  • 1 can tomato puree (10 3/4 ounces)

  • 1 orange peel (grated)

  • 1 cup cream
  • Sliced almonds

Instructions:

Brown the lamb in a small amount of oil. Drain the excess fat. Add the water to cover the meat. Bring to a boil, and simmer for 1 hour or until tender. Drain and set aside. In a separate pan, saute onion in butter. Stir in flour and curry powder, making a smooth paste. Add consomme, tomato puree, apple, orange rind and garlic. Bring to a boil,  stirring constantly. Add the lamb meat, and simmer for 30 minutes. Stir in the cream and sprinkle with almonds. Cook until heated through. Serve with Basmati rice, chutney, and assorted condiments such as bacon bits, chopped scallions, raisins plumped in butter, sliced lime, and grated coconut. This makes 3-4 servings.

Keep on cooking!
