Key West Salad Recipe - Fruit

Key West Salad - (Salads & Slaws)

Ingredients:

1 cup grapefruit sections
1 cup fresh pineapple (cut up)
1 cup orange sections
1 cup banana slices
1/2 cup walnuts (chopped, optional)
1 package cream cheese (3 ounces, softened)
1 teaspoon lemon juice
1/2 cup heavy whipping cream
Honey

Directions:

Combine the fruit and drain. Mix in the walnuts. Whip the cream cheese. Add 1 teaspoon lemon juice and honey to taste. Whip the cream slightly and stir it into the cream cheese. Pour it over the fruit. The fruit and dressing may be refrigerated until it is served. Pour the dressing over the fruit before it is served.

Thoughts On Key West Salad:

This salad looks great served in a fresh pineapple shell. You can decorate with a little paper umbrella for more visual pop. If you don't like grapefruit, you can change it to mandarine oranges. I am a grapefruit fan and the sweet and sour taste suits me.

More Information On Key West Salad:

The Florida Keys have given many recipes through the years. The Key West fruit salad has many variations and Key West salads in general may have a mixture of fruit and vegetable. I prefer only fruit because of the sweetness of the dressing. Sweet dressing on vegetables does not mix well with my taste buds but to each their own. I did find a great molded salad by KITCHEN CURIO that you may like. The recipe is from 1958.

My Thoughts For Today:

Fresh chicken eggs!

A good friend of mine contacted me and asked if I could help him move a few things. He needed help moving a small piano and a tall grandfather clock. The "small" piano was heavy and took four of us to move out of the house and into the back of my friend's truck. We were able to move the grandfather clock and the piano with the truck at the same time.

For helping my friend I was given a dozen fresh chicken eggs from his reserve. He and his wife always have plenty of eggs. My youngest daughter loves to bake and needs eggs often. My wife and I like to eat eggs too. Fresh, local chicken eggs are the best! These eggs were not refrigerated or washed. Because they are like that they will last weeks on the counter at room temperature. I am not sure of the exact shelf life of these brown eggs but I know they taste wonderful.
