Grasshopper Pie Recipe - No-bake - (Pies & Pastries)

My Thoughts For Today:


Sparkler Illusion.


It has been a few years back but I wanted to share a picture that was taken of me twirling a sparkler on July 4th. I am not sure of the exact date but I think it was 2020. That is the date posted on my Instagram.

July is a great time for our family not only because we celebrate Independence Day but also because of the food and fireworks that accompany it. We lived in West Tennessee mostly through the 90s and discovered great barbecue there.

While living in Tennessee we would visit local barbecue restaurants and they would serve barbecue pulled pork sandwiches with coleslaw on them. I had never had barbecue sandwiches that way before and it seemed a little odd to me at first. Once I tried the sandwiches I never wanted them any other way. I love cabbage any way it is cooked. I even like cabbage raw.

We also discovered barbecue bologna sandwiches while living in Tennessee. So now my tradition is cooking barbecue bologna on the charcoal grill and serving the sandwiches with coleslaw on the sandwich. What do you think about that combination? We only do that once a year but the family enjoys it and looks forward to it each year. If you have never tried barbecue bologna with coleslaw on top, I would like to encourage you to try it.

I like to buy beef bologna and have it sliced at least half an inch thick for the grill. Nothing beats the taste of beef bologna or beef hotdogs. If you like barbecue, beef bologna, and coleslaw, you will love this combination. I would like to know your initial thoughts on this.

Thoughts On Grasshopper Pie:

This pie is a chocolate wafer crust with a creamy mint pie filling that is cold and has creme de menthe, and creme de cacao in it along with marshmallow and heavy whipping cream. There are non-alcoholic variations of this recipe you will enjoy if you don't like the alcohol taste. You can keep this pie in the freezer for a month if needed. Grasshopper Pie Recipe - No Bake - (Pies & Pastries)


Ingredients:

  • 1/4 cup milk
  • 6 1/2 cups miniature marshmallows
  • 1/2 cup creme de menthe
  • 2 tablespoons white creme de cacao
  • 2 cups heavy whipping cream (whipped)
  • Green food coloring
  • Whipped cream and strawberries for garnish


Instructions:

Prepare the Crust first. Combine the milk and marshmallows on top of a double boiler. Cook, stirring every 5 minutes. Combine liqueurs, and stir into marshmallows. Fold in whipped cream, and add a few drops of food coloring to make a light green. Pour into crust and freeze. Cover with foil when frozen. The texture will resemble ice cream. To serve, cut small slices, and garnish with a dollop of whipped cream and a fresh strawberry.


Crust:

Ingredients:

  • 1 cup chocolate wafers (about 19 wafers, finely crumbled)
  • 1/4 cup sugar
  • 3 tablespoons butter or margarine (melted)


Instructions:

Combine the crumbs, sugar, and butter. Press into the bottom and upsides of a 9-inch pie plate. Chill it in the refrigerator.

Keep on cooking!
